Slot capacity is the constraint
You can only deliver what you can pick and drive. Slot capacity has to reflect real picking and driving throughput, and close automatically when full — otherwise you promise deliveries you cannot make.
Substitutions decide whether they order again
Something will be unavailable. Whether the customer accepts a substitute, wants a refund, or would rather you called, has to be captured per item at ordering. Getting substitutions wrong is the most common reason grocery customers do not come back.
